Veterans Day, First Snow, Making Candy Loaf


Jerpa was invited by Will and Claire to be an honored guest at their school for their Veterans Day Program.  The veterans gathered in the cafeteria for coffee and cookies prior to the program, and then marched in the Parade of Heroes to the gym. 

Today, November 12, 2013, we awoke to a snow-covered landscape.  I decided this would be a good day to stay in and make candy loaf.

Our first snowfall, although light, was enough.



How to make Candy Loaf
2 cups sugar    1 cup 1/2 & 1/2
1 Tbsp. glucose      1 tsp. vanilla 
1 square of baking chocolate 

First bring a pan of water to a boil to test the candy thermometer for accuracy.

Assemble ingredients and utensils you will need.

Mix sugar, 1/2 & 1/2, and glucose in large saucepan.

Bring to a boil and insert candy thermometer.

Cook to soft ball stage which is 230 deg. on my thermometer.



When it reaches 230 deg., remove from heat and pour in heat resistant bowl to cool.  Do not scrape pan, just pour out what flows normally.  This prevents a sugar chain from sugaring your candy.  You may scrape pan droppings to another bowl if you wish for tasting. 


When it cools, add vanilla and beat until it starts to get firm.  You may have to chill for a while to achieve this step.

Form in loaf shape.  You may frost with 1 square baking chocolate.  I wait until I have made several loaves before frosting.
